Traditional Corn Tortilla Making Class

Traditionally made corn tortillas are prepared using a process called 
nixtamalization which yields an intricate host of synergistic benefits- 
unlocking the corn's flavor, digestibility, and nutritional content.  In 
this class, we will learn how to make traditional corn tortillas from
Indian corn grown at Mendocino Organics.  We'll discuss the history,
benefits, and chemistry of this traditional food technology, and go
through the process of making real homemade corn tortillas. We'll cover
the different types of corn and alkali used, and discuss ways in which
you can make and grow everything you need at home.  We'll end the
workshop with our own handmade corn tortillas, paired with local
ingredients sourced through SHED.
